This fixes the build after the core-updates merge.

[source]: Remove snippet obsoleted by PY_MPV_SKIP_TESTS.
[build-system]: Switch to pyproject.
[arguments]: Set newly-available PY_MPV_SKIP_TESTS variable.
[native-inputs]: Add python-pytest and python-pyvirtualdisplay.
