scripts: environment: Allow lists of packages in expressions.

* guix/scripts/environment.scm (options/resolve-packages): Match against
  lists of packages when evaluating expressions.
* tests/guix-environment.sh: Add test.
* doc/guix.texi ("invoking guix environment"): Add docs.
